Gathering inspiration from the fragrant gardens and delicious cuisine of the Mediterranean, Pine Bistro is ready to transport your taste buds on a culinary journey. “We wanted to give Southern Highlands an elevated dining option in our community,” Lowell Raven, Partner at AYYA Hospitality Group, told us. “The restaurants in this area are generally family-based or fast-food/taverns, and the Strip or Summerlin was the only option for a night out. The dining experience is curated for adults who want to enjoy a great dinner or after-work cocktail and feel as if they are in a social and elegant atmosphere with other adults.”

The modern bistro offers a delightful and social dining experience, serving up family-style dishes that are elevated with unique flavors sourced from California’s freshest ingredients and Mediterranean traditions. “We included dishes on our menu that highlight regional ingredients such as sumac, orange blossom water, pine nuts, sesame seeds, beans, etc.,” Raven explained. “The way that these ingredients are prepared gives us the traditional flavors that can be seen in items such as our hummus, baba ghanoush, tabbouleh, kibbeh, kabobs, shawarma, and incredible desserts.”

The fusion of flavors bring a unique taste profile to the menu. “The menu is more a curation of Mediterranean dishes than actual fusion,” Raven said of the signature dishes on the menu. “At Pine Bistro, we are elevating traditional Lebanese cuisine as well as highlighting the amazing combination of ingredients from the region. This can be seen in our use of spices on our signature kabobs and shawarma plates, as well as the use of fine cheeses and vegetables in dishes such as our eggplant and zucchini tower, tabbouleh, and bistro salad.”

You can expect an innovative blend of sweet and savory dishes coupled with visually stunning cocktails created by the best mixologists in Las Vegas. “AYYA’s cocktail program is rooted in cocktails done correctly. Freshly juiced ingredients, house-made syrups, a balance of flavors, great spirits, and correct icing are all integral parts of our program,” Raven said of the mixology program and cocktails. “For Pine Bistro, our menu features both traditional cocktails done right in addition to cocktails made with the flavors and ingredients from the Mediterranean that we curated specifically for this menu. Some highlights are our Smoked Fig Old Fashioned, The Temple of Niha, and our Orange Blossom Carajillo.”

Pine Bistro serves up an unforgettable experience that showcases the Mediterranean’s exciting and vibrant flavors and cultures. “We say Pine Bistro is a “toast to the Mediterranean” as it highlights the culture and flavors by evoking questions about ingredients, flavors, and history with every sip or bite,” Raven told us. “For someone familiar with the cuisine, Pine Bistro is a new elevated presentation that is a step above the traditional kitchen flair. For guests unfamiliar with the culture and cuisine, we have made items approachable throughout the menu for tapas-style dining to learn more and more about the cultural items as they journey through the menu. Bringing awareness to the amazing cuisine and culture in a modern way is what we are excited about.”
