No matter your reason for brunching, itโs definitely a favorite meal in Las Vegas. Whether youโre starting the morning late after a night of partying or just looking to gather with friends for some cocktails and mid-morning fare, Las Vegas loves brunch. Three restaurants recently introduced brunch atย Resorts World Las Vegas, and we recently attended a hosted media dine-around to check out the three brunches in action. Three New Brunches at Resorts World Las Vegas
Wallyโs Wine & Spirits
Our first stop was atย Wallyโs Wine & Spirits. Weโd visited once before for a media shoot, and the restaurant has some of the most photogenic dishes weโve ever seen. The food began arriving at the table as soon as we were seated (or maybe even before) and the food was definitely as pretty as we remember (Executive ached Eric lโHuillier definitely knows how to do some stunning plating); the brunch items were just as good as those on the dinner menu.

We started with the fruit bowl and the yogurt and granola- both of which were bright and colorful and extremely fresh along with the โSmoked Salmon Tartine.โ The chopped chicken salad was flavorful and unexpected, with fantastic seasonal flavors, including pumpkin seeds and roasted winter squash. Next were the decadent truffle eggs served with baguette, the steak and eggs cooked with a red wine beurre rouge, and the BLTA Benedict with thick-cut bacon, house-made ciabatta and a jalapeรฑo Remoulade. The stars of the meal were the famous โWally Burgerโ and the truly opulent Calvisius caviar served with all necessary accouterments (you can find the caviar in the wine shop too). Brunch at Wallyโs Wine & Spirits is served daily from 11 a.m. to 4 p.m.

FUHU
After two media dinners atย FUHUย and a lot of hype surrounding the brunch, we were eager to get a look at the meal in real life. Weโd never visited on a weekend (or an afternoon), and brunch at FUHU is an entirely different experience. The weather was perfect (fall in Las Vegas is typically ideal patio weather), and we were seated outdoors near the perimeter of Ayu Dayclub- the resortโs 21 and over pool with a full DJ set in action. In the center of each table were dragon-shaped decanters featuring the restaurantโs signature cocktail โDragon in the Cityโ (a take on the classic Cosmopolitan).

We started with a selection from the โDim Sum Collection,โ which included various modern variations on traditional dim sum pieces (the shrimp puff, spring rolls, a pineapple bun with Foie Gras and a shumai with porcini mushrooms), a sashimi platter and the โCoconut Shrimp Kinilaw.โ Next came the chicken katsu and two of the items we were most excited to try. If youโre looking for the most Instagrammable menu items, opt for the โFUHU Prime Shortrib Benedictโ and the โUbe Pancakes.โ The two dishes provide unexpected pops of color at brunch with the pink-hued red vinegar hollandaise sauce on the shortrib Benedict and the signature purple color of the ube. FUHU serves brunch every Saturday from 11 a.m. to 3 p.m.
ยกVIVA!
We had recently attended a hosted tasting at Chef Ray Garciaโsย ยกVIVA!ย and were extremely curious about brunch. With one of the prettiest patios in Las Vegas, ยกVIVA! definitely gets points for some stunning ambiance.

We arrived on the patio to find red and white sangria ready for pouring (brunch has a bottomless sangria option for $28 per person). The restaurantโs chicharrones (we tried them at dinner) are on the brunch menu and consist of chicken skins, pork rinds, shrimp chips and crab chips. Other menu cross-overs include the ceviche (made with yellowtail), โCoctel de Camaron,โ and the vegetarian โPiรฑa Asada.โ The โShort Rib Guisadoโ tacos were a brunch highlight, and youโll also find more traditional brunch items like chilaquiles, huevos rancheros and the restaurantโs breakfast burrito. Brunch at ยกVIVA! is served every Saturday and Sunday from 10 a.m. to 2 p.m.
